To make matar paneer, the first step is to prepare the gravy. This is done by sautéing onions and garlic in oil until they turn golden brown. Then, tomato puree and spices such as cumin, coriander, and turmeric are added to the mixture, and cooked until the oil begins to separate from the mixture. Once the gravy is ready, diced paneer and green peas are added to the mixture and cooked for a few minutes until the paneer is heated through and the peas are tender.

2 Onions finely chopped or blended
1 cup Milk whole fat, toned, etc. as your prefer
1 tsp Ginger garlic paste you can make your own or buy from grosery store
2 pieces Green chilies
2 tbsp Oil
Spices
Salt to taste
1½ tsp Kashmiri mirch powder
¼ tsp Turmeric powder
1 tsp Coriander powder
1 tsp Garam masala powder
½ tsp Cumin seeds
2 pieces Cardemom

Directions

Softening up the paneer

Begin by preparing the paneer. Cut 200g of paneer into medium to large-sized pieces. Place a pan on the stove and fill it with water up to half.
Once the water comes to a simmer, add the paneer and let it cook for 5 minutes. Turn off the heat and set it aside for later.

Gravy tadka

Place a non-stick kadhai (cauldron) over medium heat. Add 2 tbsp oil and let it heat. Then add cumin seeds and cardamom. Once they start to sizzle, add chopped onions and green chilies and sauté until golden brown.
Next, add ginger-garlic paste and mix well. Add salt, kashmiri mirch, coriander powder, and turmeric powder, and sauté for 2 minutes. Let the mixture cook on medium flame for another 2 minutes.

Gravy

To make the gravy, blend tomatoes in a mixture and add them to the kadhai. Let it cook until the oil separates.
Then, add peas, garam masala, and milk, and mix well. Pour the milk slowly while mixing the gravy to prevent it from curdling.

Now it's time to add the paneer. Rinse all the water from the pan and take all the paneer pieces out. They should be soft by now. Add them to the gravy and mix well. Close the lid and let the mixture cook for 10 minutes, but no longer as the paneer may become tough.
