How to Make Your Own Mix Veg Sabji: A Step by Step Guide

Vegetables are an essential part of any healthy diet, and Sabji recipes are no exception. If you’re looking for a quick and easy way to incorporate some vegetables into your meals, then mixing them together in a sabji is the perfect solution! In this guide, we’ll show you how to make your own mix Veg sabji recipe, step by step.

1 small cup Peas
1 cup Cauliflower florets
2 medium sized Potatoes chopped
1 small onion
1 tsp Garam masala
1 Carrot chopped
1 Capsicum
2 tbsp ghee or butter
1 tsp cumin seeds
3 cardamom pods
1 bay leaf
1 tsp Kasoori methi
½ tsp Salt
1½ tsp Kashmiri mirch powder
¼ tsp Turmeric
1 tsp Ginger garlic paste
finely chopped Coriander

Preparing the Vegetables

First, trim the cauliflower, carrot, and potatoes into bite size pieces. Add them to a large pot with enough water to cover the vegetables.
Chop the onion into small pieces and put it in a different bowl.

Making the Sabji Base Tadka flavour

In another large pot or skillet, heat up 2 tablespoons of ghee or butter over medium heat until melted. Add in the cumin seeds and let them cook for about 30 seconds before adding in the cardamom pods and bayleaf.
Add in thinly sliced onions with 1 tsp ginger garlic paste and let the mixture cook until onions are golden brown. Add chopped tomato, salt, and kashmiri mirch powder and mix them all together.

Making the Sabji

Now it's time to make our sabji! Combine 1 cup of cauliflower florets, 2 cut potatoes, chopped carrot, chopped capsicum, and 1 cup of peas in a large bowl and stir until combined. Pour this mixture into the heated skillet/pot and mix everything well.
Let it cook for 5 mins. Simmer the stove and add 1/2 cup of water, 1 tsp Garam masala, and 1 tsp Kasoori methi and mix them well. Cover the pot/skillet with a lid and let it cook on low heat for about 10 mins or until all the vegetables are cooked well. Add more water if necessary.

Serve

Once the sabji is well cooked, turn off the stove. Finely chop some green coriander and sprinkle it in the sabji for garnish.
Serve it hot with chapati or roti with raita on the side.

Notes

Add more water if necessary to keep the vegetables from burning at the base.
Monitor the sabji every 2-3 minutes.
It is usually cooked in 10-15 mins but make sure all the vegetables are cooked properly
You dont necessarily have to add all the vegetables mentioned. Any vegetable can be skipped if unavailable.
